Fluffy Matcha Muffins

• 200 g Dinkelmehl
• 120 g unraffinierter Zucker ( bspw. Kokos- oder Rohrohrzucker)
• 1 gehäufter EL Matchapulver
• 1,5 TL Backpulver
• ¼ TL Natron
• ¼ TL Salz
• 150 ml pflanzliche Milch (Zimmertemperatur)
• 20 ml frisch gepresster Zitronensaft
• 50 g vegane Butter
• 30 g flüssiges desodoriertes Kokosöl
Topping

• 100g weiße, vegane Schokolade
• Etwas Matchapulver

preparation

Preheat the oven to 180 ° C.

Mix the dry ingredients in a bowl. Heat the butter in the saucepan until it is liquid and remove from the stove. Mix separately lemon juice, liquid butter, milk and liquid coconut oil and add to the dry ingredients. Process well into a dough.

Fill the dough into a silicone muffin.
