Cherry Matcha Muffins

Ingredients for 8-10 muffins

DRY INGREDIENTS

  • 200g spelt flour
  • 100g coconut blossom sugar
  • 1 pinch of grounded vanilla
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt

LIQUID INGREDIENTS

  • 100g vegan butter
  • 175 g plant-based milk
  • 1 squeeze of lemon
  • 170 g pitted cherries from the jar

 

  • 2 bars of Matcha chocolate from Health Bar

Preparation:

Preheat the oven to 180°C for a fan oven.

First mix the dry ingredients in a bowl. Heat the vegan butter with the milk and add to the flour. Mix well. Add 1 squeeze of lemon. Then carefully fold the cherries into the batter. Lightly grease the muffin tin and pout the batter in. Bake for 25-30 minutes. Allow to cool completely and then remove from the mold.

Melt the Matcha chocolate in a water bath, top the muffins with it and garnish with cherries.
