Rinse the fresh spinach and put it wet in skillet and sauté over medium-high heat until wilted (when using frozen spinach just let it de-frost instead). In a blender, blend the spinach with the oil and salt. Mix the dry ingredients together, add the spinach puree and mix. Knead with your hands for about 5 minutes until you have a smooth dough. Depending on the consistency, add a little water or flour.
Shape the dough into a ball, cover and leave to rest in the fridge for about 20 minutes. Then flour the work surface, divide the dough into 3 parts and roll out thinly.
Heat a pan over medium-high heat and cook the flatbreads for 1-2 minutes on each side until small bubbles are visible.
Fill with the desired ingredients, roll up and enjoy.
