Matcha Coins
Tender and delicious! 🍵✨ These Matcha discs are the perfect combination of healthy ingredients and tempting flavor. The dough made from spelt and teff flour is refined with a touch of Matcha, while the creamy chocolate and crunchy pistachios complete the enjoyment. Ideal as a sweet snack or dessert for any occasion! 🍬🌿

First, mix the dry ingredients in a bowl.
In another bowl, mix the liquid ingredients.
Process both into a smooth dough, mixing not too long.
Chill the dough in the refrigerator for 1 hour.
Preheat the oven to 180 degrees Celsius with top and bottom heat.
Press the dough into silicone muffin molds. Press down as evenly as possible to create a nice, as smooth as possible disc.
Bake for 13-15 minutes and let cool well before removing from the mold.
Melt the chocolate in a hot water bath. Top the Matcha discs as desired (either completely cover with chocolate or drizzle fine white chocolate threads over them.)
Finally, sprinkle with chopped pistachios as desired and enjoy once the chocolate has hardened.
