🍪Cookie dough:

  • 140 g spelt flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • ½ tsp ground vanilla
  • 6 g HEALTHBAR matcha powder –to the product
  • 100 g raw cane sugar
  • 85 g liquid vegan butter
  • 2 tbsp applesauce

  • 1 apple
  • 1 tbsp applesauce
  • 1 heaped teaspoon starch
  • A little vanilla

🧑‍🍳 Here's how – Step by Step

1. Preheat oven:
On170 °C top/bottom heatset.

2. Prepare the dough:
Mix the dry ingredients (flour, baking powder, baking soda, salt, vanilla, matcha) in one bowl. In a second bowl, combine the butter, sugar, and applesauce. Combine the two mixtures and knead into a smooth dough.

3. Shape and bake cookies (part 1):
Form the dough into 4-5 balls, place them on a baking tray lined with baking paper (leave plenty of space between them) andBake for 12 minutes.

4. Prepare the apple filling:
Dice the apple and simmer gently in a saucepan with a little water, apple puree, and vanilla. Stir the cornstarch with a little water until smooth, fold in, and bring to a boil briefly until it thickens.

5. Fill & continue baking:
Put 1 teaspoon of apple mixture in the middle of each cookie and2–3 minutesPut it in the oven.

6. Cool & top:
Let cookies cool completely. Optionally withMatcha chocolateTo decorate: Melt dark chocolate, mix with a pinch of matcha and drizzle over the cookies.
