  • 60 ml plant-based milk
  • 70 ml maple syrup

1. Preparation
Soak cashews in warm water for at least 1 hour. Preheat oven to 180°C (top/bottom heat). Line a loaf pan with baking paper or grease it.

2. Prepare the dough
Core the apples and dice them. Combine the dry ingredients (flour, sugar, spices, baking powder, and salt) in a bowl. Stir in the apple puree, coconut oil, and plant-based milk. Finally, fold in the apple pieces.

3. Baking
Pour the batter into the prepared pan, smooth it out, and bake in the oven for about 60 minutes. Don't forget to do the toothpick test. Then let it cool completely.

4. Mix the frosting
Drain the soaked cashews and blend them with plant-based milk, maple syrup, and HEALTHBAR Matcha in a high-performance blender until creamy.

5. Assemble
Spread the matcha frosting over the cooled cake and dust with a little matcha powder or chopped pistachios, for example. Serve chilled.
