Matcha Cinnamon Rolls

Matcha Zimtschnecken

Ingredients for 9-12 rolls, depending on size

• 180 ml oat milk
• 250 g peeled and diced sweet potato
• 2 tbsp deodorized coconut oil
• 1 tsp apple cider vinegar
• 3 tbsp maple syrup
• 300 g spelt flour
• 100 g ground almonds
• ½ tsp salt
• 2 tsp baking powder
• ¼ tsp baking soda
• 15 g matcha powder
• 70 g coconut blossom sugar
• 2 tsp cinnamon
• 3-4 tbsp deodorized coconut oil
Topping

• 1 bar Health Bar Matcha chocolate

Dice the sweet potato and boil it in water until soft. Then drain and mash with 1-2 tablespoons of water until smooth. Stir the puree with the oat milk, coconut oil, apple cider vinegar, and maple syrup in a bowl until smooth.

In another bowl, sift the flour, almonds, salt, baking powder, and baking soda, and mix in the Matcha. Add 300 g of the flour mixture to the liquid mass and fold in. Now add the remaining flour and mix together. Do not mix for too long, otherwise the dough will become a bit too moist due to the sweet potato.

Cover and let rest for 30 minutes. Then preheat the oven to 190 degrees Celsius with top and bottom heat.

Roll out the dough on a well-floured surface into a rectangle (about 11x15cm) and dust with a little flour.

In a bowl, mix the coconut blossom sugar with the cinnamon and the coconut oil. A smooth paste should form. Spread the dough evenly with it.

Then take a pizza cutter or a knife and cut the dough into strips about 3.5-4 cm wide lengthwise (see picture). Now tightly roll the dough lengthwise and place it in a greased baking dish (it can also be a quiche dish). Slightly press down the individual cinnamon roll and place the next one directly next to it. Continue rolling the strips until all the rolls are distributed in the dish.

Now bake in the oven for 30 minutes and serve warm.
