Matcha-Spinat Tortillas

Ingredients

• 100g Spinat frisch oder gefroren
• 30ml Pflanzenöl
• ½ TL Salz
• 185g Dinkelmehl
• 1 gehäufter TL Health Bar Matcha
• ½ TL Backpulver

preparation

Rinse the fresh spinach and steam it in a pan over medium heat until it has wilted (simply thaw frozen spinach). Puree the spinach with the oil and salt in a blender. Mix the dry ingredients and add the spinach puree, then combine. Knead with your hands for about 5 minutes until a smooth dough forms. Depending on the consistency, add a little water or flour as needed.

Form the dough into a ball, cover it, and let it rest in the refrigerator for about 20 minutes. Then flour the work surface, divide the dough into 3 parts, and roll it out thinly.

Heat a pan over medium heat and fry the flatbreads on each side for 1-2 minutes until they form small bubbles.

Fill with the desired ingredients, roll up, and enjoy.
