Cherry Muffins with Matcha

Kirsch Muffins mit Matcha

For 8-10 muffins

DRY INGREDIENTS

• 200 g spelt flour
• 100 g coconut blossom sugar
• 1 pinch ground vanilla
• 1.5 tsp baking powder
• 0.25 tsp baking soda
• 0.25 tsp salt
LIQUID INGREDIENTS

• 100 g vegan butter
• 175 g plant-based milk
• 1 splash lemon
• 170 g pitted cherries from a jar
• 2 bars of Matcha Chocolate from Health Bar

preparation

Preheat the oven to 180 °C convection.

First, mix the dry ingredients in a bowl. Warm the vegan butter with the milk and add it to the flour. Mix well. Add a splash of lemon. Then gently fold the cherries into the batter. Lightly grease the muffin tin and fill it with the batter. Bake for 25-30 minutes. Let cool completely and then remove from the tin.

Melt the Matcha chocolate in a water bath, top the muffins with it, and garnish with cherries.
