For the pumpkin pie:

  • 200 g spelt or wheat flour (light)
  • 1 tsp baking soda
  • 1 pinch of salt
  • 250 g pumpkin puree
  • 1 tsp vanilla
  • ½ tsp cinnamon or pumpkin pie spice
  • 50 g oat drink
  • 1-2 teaspoons lemon or orange juice
  • 60 g cashew butter
  • 130 g coconut blossom or raw cane sugar

For the cashew matcha frosting:

  • 100 g cashew butter
  • ½ tsp vanilla extract
  • 1 pinch of salt
  • 30 g plant drink
  • 50 g maple syrup
  • a splash of lemon or orange juice (optional)
  • 40 g melted coconut oil
  • 2–3 tsp HEALTHBAR Matcha

For the granola topping:

  • 25 g oat flakes
  • 25 g nuts or seeds of your choice
  • 1 pinch of salt
  • 1 pinch of cinnamon or pumpkin spice
  • approx. 15 g maple syrup

🧑‍🍳 So geht’s – Step by Step

1. Prepare the pumpkin dough
Preheat oven to 190°C (375°F). Combine dry ingredients (flour, baking soda, salt, and spices) in a bowl. In a second bowl, combine pumpkin puree, cashew butter, sugar, plant-based milk, citrus juice, and vanilla. Then, using a spatula or spoon, gently mix everything into a dough, stirring only as much as needed.

2. Baking
Spread the batter onto a baking sheet lined with parchment paper. Bake for 25–30 minutes – don't forget to test with a skewer. Then let it cool completely.

3. Mix the frosting
While the cake is baking, melt the coconut oil. Combine the cashew butter, vanilla, maple syrup, plant-based milk, salt, and citrus juice in a bowl and beat with a mixer until creamy. Then stir in the liquid coconut oil. Refrigerate the cream for at least 1.5–2 hours.

4. Whip the frosting
After chilling, beat the frosting again with a mixer until lighter and fluffier. Stir in the HEALTHBAR Matcha and continue beating briefly. Refrigerate until ready to use.

5. Prepare the granola topping
Toast the oats, nuts, spices, and salt in a pan without oil. Add the maple syrup, let it caramelize, and then let it cool on parchment paper.

6. Finish the cake
Spread the completely cooled cake with the matcha frosting. Sprinkle with the cooled granola—and enjoy!

  • Pumpkin puree from Hokkaido, whether homemade or canned, both work.
  • The frosting can also be prepared the day before – important: whip it well after cooling!
  • Instead of a baking sheet, you can also use muffins or a small springform pan (adjust the baking time if necessary).
Can I use nut butter other than cashew?

Cashew butter has a neutral flavor and is particularly creamy – almonds or macadamia nuts also work, but might have a more dominant flavor.
