✨ Ingredients for about 4 servings

  • 400 g silken tofu
  • 160 g vegan white chocolate (e.g. iChoc)
  • 2 tsp coconut oil
  • 3 tbsp maple syrup
  • 2 tsp HEALTHBAR Matcha powder
  • a pinch of ground vanilla

🧑‍🍳 So geht’s – Step by Step

1. Melt the chocolate
Slowly melt the white chocolate and coconut oil in a double boiler, stirring occasionally until smooth.

2. Mix ingredients
Combine silken tofu, maple syrup, HEALTHBAR Matcha, vanilla, and melted chocolate in a high-speed blender. Blend on high for 3–4 minutes, until the mixture is completely smooth and slightly foamy.

3. Filling & cooling
Pour the still-liquid mixture into dessert glasses or a larger bowl. Let it set overnight in the refrigerator (at least 6 hours).

4. Serve
After cooling, the mousse is creamy, light and airy, and ready to serve. Top with matcha chocolate, roasted nuts, or strawberries, if desired.

💡 Tips & Tricks

  • Silken tofu is the best base for a fluffy texture – do not replace it with firm tofu.
  • For extra creaminess, you can mix in 1 tablespoon of plant-based cream.
  • Also great as a filling for tarts or as frozen mousse.
  • It gets even more elegant with a topping of grated HEALTHBAR Matcha chocolate.
Can I use firm tofu instead of silken tofu?

No – silken tofu provides the airy, creamy texture. Firm tofu would be too dense and alter the flavor and mouthfeel.

Which vegan chocolate is best?

We recommend rice-based white chocolate, such as iChoc White Vanilla or similar varieties. The finer the melting point, the better the result.

How intense does the matcha taste?

Pleasantly mild! The sweet chocolate perfectly balances the subtle bitterness of the HEALTHBAR Matcha – a harmonious dessert with a slightly green character.

Can I also use the recipe in a tart?

Yes! The mixture makes a great creamy tart filling—simply spread it onto a prepared crust and chill.

How can I enhance the appearance of the mousse?

With fresh berries, a little grated matcha chocolate, or a touch of matcha powder as a dusting, it becomes an eye-catcher – ideal for dinner or guests.
