In principle, you can bake and cook with any matcha powder. Many people use a lower-quality matcha for dishes or drinks with strong flavors because the delicate flavor is otherwise lost.
However, at Health Bar, we consciously recommend high-quality matcha – even for baking or cooking. Because the better the quality, the more delicate and harmonious the flavor remains.

Because this matcha has a mild, sweet flavor that pairs perfectly with milk alternatives, yogurt, or cream. Its gentle, fresh profile is particularly well-preserved in recipes that don't require high heat.
If you are baking or cooking, feel free to use Organic Matcha Traditional – here the stronger flavor brings the best results, even at high temperatures.
When matcha is heated, some of its heat-sensitive components, such as certain antioxidants, are actually lost. But don't worry—even in warm dishes or when baking, matcha still provides valuable nutrients and, above all, is responsible for its distinctive flavor and beautiful green color.
For high heat recipes we recommend our Organic Matcha Traditional, as it has a more intense flavor and is still excellent after baking.
It all depends on the recipe and your personal taste! For drinks like matcha latte, 1–2 grams is usually sufficient. When baking or cooking, you can use a little more to ensure the matcha flavor comes through well even after heating.

The intense green color is one of matcha's highlights – however, it can change at high temperatures. When baked or heated for extended periods, the color often becomes somewhat duller or slightly brownish. To minimize this, we recommend processing the matcha as gently as possible and not baking at too high a temperature.
