Matcha Cookie

For 7-9 cookies

Huevo de chía

• 1 Tl Semillas de chía
• 3 cucharaditas de agua caliente
• 60 g de mantequilla vegana
• 45 g de azúcar no salvado
• 1 cucharadita de vainilla molida
• ½ cucharadita de refrescos
• 1 Str.
• 2 tl tapiokamehl
• 35 g de almendras molidas
• 75 g de harina ortografía
• 1 pizca de sal

Coberturas

• 25 G de avellanas asadas
• 25 g de chocolate blanco (sin azúcar refinada)

Preheat the oven to 180 °C or 350 °F convection.

CHIA-EI

Mix the chia seeds with the water in a glass and let them swell.

Heat the butter in a pot. Add the sugar and stir until the sugar has dissolved. Remove the pot from the heat. Stir in the chia egg and the ground vanilla into the mixture.

In another bowl, mix the remaining ingredients (except for those for the topping) and combine with the butter mixture to form a smooth dough.

Chop the hazelnuts finely and briefly roast them in a pan without oil.

Chop the white chocolate roughly.

Line a baking sheet with parchment paper. Form 7-9 equally sized cookies (not too thin), place them on the baking sheet, and top with white chocolate chips. Gently press the chocolate. Bake for 10-12 minutes. Allow to cool well on the baking sheet.
