Ingredients

  • 100 g fresh or frozen spinach
  • 30 ml vegetable oil
  • ½ tsp salt
  • 185 g spelt flour
  • 1 heaped tsp HEALTHBAR Ceremonial Matcha
  • ½ tsp baking powder

🧑‍🍳 Here's how – step by step

1. Prepare the spinach
Rinse fresh spinach and, still dripping wet, sauté it in a pan until it collapses. Simply let frozen spinach thaw.

2. Purée
Purée the spinach finely with the oil and salt in a blender.

3. Make the dough
Combine the flour, Matcha and baking powder in a bowl. Add the spinach purée and knead by hand for approx. 5 minutes into a smooth dough. Add a little water or flour depending on the consistency.

4. Let it rest
Shape the dough into a ball, cover and let it rest in the fridge for approx. 20 minutes.

5. Roll out & bake
Flour the work surface, divide the dough into 3 portions and roll each out into thin flatbreads. Bake in a hot, dry pan over medium heat for 1–2 minutes on each side.

6. Serve
Fill with your favourite ingredients, roll & enjoy!

💡 Tips & Tricks

  • Use for wraps, quesadillas or as a side for bowls
  • They turn even greener with a splash of lime juice in the dough
  • Stored airtight they stay fresh for 2–3 days – or freeze them!
Can I use wheat flour as well?

Yes, that works just as well! Spelt, however, gives a slightly nutty note that harmonises wonderfully with the Matcha.

Can you taste the Matcha strongly?

No – the HEALTHBAR Ceremonial Matcha only adds a subtle umami touch and gives the lovely green colour. Very subtle in flavour.

What's the best way to store the tortillas?

Best kept airtight in the fridge. You can also freeze them and toast them or briefly warm them in the pan when needed.

What goes well as a filling?

Hummus, avocado, fresh vegetables, tofu, rice, falafel – or sometimes sweet with banana & nut butter!
