Fluffy Matcha Muffins

For about 7 pieces

• 200 g spelt flour
• 120 g unrefined sugar (e.g. coconut or raw cane sugar)
• 1 heaped tablespoon of matcha powder
• 1.5 tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
• 150 ml plant-based milk (room temperature)
• 20 ml freshly squeezed lemon juice
• 50 g vegan butter
• 30 g liquid deodorized coconut oil
Topping

• 100g white, vegan chocolate
• Some matcha powder

Preheat the oven to 180 °C convection.

Mix the dry ingredients in a bowl. Heat the butter in a pot until it is liquid and remove from the heat. In a separate bowl, mix the lemon juice, liquid butter, milk, and liquid coconut oil, and add to the dry ingredients. Process well together into a dough.

Fill the batter into a silicone muffin mold.

Bake for 20 minutes. Let cool and then remove from the mold. Melt the chocolate, pour it over the muffins, and top with matcha powder as desired!
