Über dieses Rezept

Vanilla croissants are one of the absolute classics of the cool season - but why not reinterpret them? This recipe combines traditional flavor with a twist HEALTHBAR Matcha For a subtle twist. The result: crumbly, slightly green crescents with winter spices such as cardamom and cinnamon - perfect for tea or as a pretty pastry gift!

💡 Tips & Tricks

  • For an extra fine matcha taste, you can also mix matcha with powdered sugar and sprinkle it on top.
  • The crescents will last for about 2 weeks in a cookie jar - perfect for meal prep or gifts.
  • You can also add vanilla pulp or ground bourbon vanilla to enhance the classic note.
Can I also bake the crescents gluten-free?

Yes - replace the spelled flour with a gluten-free flour mixture with a binding agent (e.g. xanthan gum).

How strong do you taste the matcha?

Gentle - 1 teaspoon of matcha gives a subtle, slightly grassy note. For more intense flavor you can use 2 tsp.

Which butter alternative works best?

Cold, vegan margarine with a high fat content (at least 70%) is ideal – it makes the dough brittle.

Can I freeze the crescents?

Yes! It's best to freeze them unbaked and bake them fresh when you need them - just leave them in the oven for 2-3 minutes longer.

What goes well with it in terms of taste?

Tea (e.g. jasmine or black tea), hot oat milk or a matcha latte make the crescents a cozy winter duo.
