Was ist Matcha ?

Matcha ist gemahlener grüner Tee in seiner reinsten Form, enthält allerdings mehr sekundäre Pflanzenstoffe ( Farb-,Duft, und Aromastoffe) und ist somit besser als der herkömmliche grüne Tee.
Was Matcha-Pulver auszeichnet, ist ein hoher Anteil an gesunden Antioxidantien, die das Immunsystem unterstützen und dem Alterungsprozess entgegenwirken soll. Denn anders als bei grünem Tee, wo die Teeblätter nur im heißen Wasser ziehen, trinkt man bei Matcha die zermahlenen Teeblätter komplett mit. Umso intensiver ist auch der Geschmack.

Was bedeutet Ceremonial und woran erkennt man die höchste Qualität?

Unser Ceremonial Bio Matcha hat besitzt die höchste Qualität, was bedeutet, dass Blätter aus der allerersten Ernte im Frühjahr verwendet wurden. Diese sind besonders mild im Geschmack und unterscheiden sich qualitativ (Geschmack und Farbe) von allen nachfolgenden Ernten, die in den weiteren Monaten des Jahres folgen.
Ein weiterer Qualitätsunterschied ist das Ernten und Verarbeiten per Hand.
Bei der Ernte unseres Matchas werden kaum Maschinen eingesetzt. Die ersten Blätter werden per Hand gepflückt, schonend gedämpft und mit Granitsteinen gemahlen.

Der Anbau erfolgt ohne Pflanzenschutzmittel. Es werden jährliche Bodenproben, sowie Labortests bezgl. der Schwermetall- und Strahlenbelastung durchgeführt, um die bestmögliche Qualität liefern zu können. Zudem wird jede Charge sorgfältig auf deren mineralische Eigenschaft überprüft.

Unsere Qualität ist durch strenge Standards des Öko-Zertifikats der japanischen Zertifizierungsstelle JONA und der dt. Bio-Zertifizierung bestätigt.
