This recipe combines the traditional taste with a pinch of HEALTHBAR Matcha for a fine twist. The result: crumbly, slightly green crescents with wintry spices like cardamom and cinnamon – perfect with tea or as a pretty baked gift!

✨ Ingredients for 1 baking tray (approx. 18 pieces)

🥣 Dough:

  • 60 g spelt flour (Type 630)
  • 50 g ground almonds
  • 20 g coconut blossom sugar
  • 1 pinch salt
  • ½ tsp cinnamon
  • 1 pinch cardamom
  • Optional: 1–2 tsp HEALTHBAR Organic Matcha – to the product
  • 55 g cold vegan butter (in small pieces)

🧑‍🍳 Here's how – step by step

1. Preheat the oven
Preheat the oven to 170 °C fan (or 340 °F).

2. Prepare the dough
Finely grind the almonds. Mix all the dry ingredients including the optional Matcha in a bowl. Add the cold butter in pieces and quickly knead into a smooth dough.

3. Shape the crescents
Take small portions of the dough, roll into crescent shapes and place on a baking tray lined with baking paper.

4. Bake
Bake the crescents in the preheated oven for approx. 15 minutes until lightly golden brown.

5. Dust & cool
While still warm, dust with icing sugar or Matcha – and then leave to cool completely.

  • For an extra fine Matcha flavour, you can also mix Matcha with icing sugar and dust with it.
  • The crescents keep in a biscuit tin for approx. 2 weeks – perfect for meal prep or gifts.
  • You can also add vanilla seeds or ground Bourbon vanilla to enhance the classic note.
Can I also bake the crescents gluten-free?

Yes – replace the spelt flour with a gluten-free flour blend with a binding agent (e.g. xanthan).

How strongly can you taste the Matcha?

Gently – 1 tsp Matcha lends a subtle, slightly grassy note. For a more intense flavour you can use 2 tsp.

Which butter alternative works best?

Cold vegan margarine with a high fat content (at least 70%) is ideal – it makes the dough crumbly.

What pairs well with them in terms of flavour?

Tea (e.g. jasmine or black tea), hot oat milk or a Matcha latte make the crescents a cosy winter duo.
