Ingredients for 1 glass:

  • 2 small peaches
  • 2 tbsp coconut blossom sugar
  • some water (for the syrup)
  • 1 tsp Sencha
  • 150 ml water (approx. 70 °C)
  • juice of half a lemon
  • ice cubes
  • 2 g Matcha
  • 60 ml water (approx. 80 °C)

🧑‍🍳 Here's how – step by step

1. Prepare the peach syrup
Chop the peaches into small pieces and simmer with a little water and the coconut blossom sugar for 10–20 minutes. Then strain and let the syrup cool.

2. Brew the Sencha
Let the Sencha steep in 70 °C hot water for 1–2 minutes and then let it cool completely.

3. Prepare the glass
Add 2 tsp peach syrup, the lemon juice and ice cubes to a glass. Top up with the cooled Sencha.

4. Whisk the Matcha
Whisk the Matcha with water until fine and frothy.

5. Layer & serve
Carefully pour the Matcha over the iced tea and enjoy straight away.

For more fruitiness: A few fresh peach pieces in the glass make the drink even juicier and add extra summer vibes.

For more freshness: A little mint or an extra splash of lemon brings even more lightness.

For perfect layers: Pour the Matcha slowly over the back of a spoon — this keeps the layered look especially nice.

Can I use a different tea instead of Sencha?

Yes — light green tea or jasmine tea work well too. But Sencha gives the freshest, clearest base.

Can I make the drink without sugar?

Of course. The natural sweetness of the peach is often enough on its own — depending on ripeness.

Can I use frozen peaches?

Yes, that works just as well and is especially handy when they're out of season.

Can I make the drink with Mulberry Matcha too?

Yes — for a caffeine-free version you can simply swap the Matcha for Mulberry Leaf Matcha. This makes it even gentler and perfect for the afternoon or evening.
