Raspberry Cookie Bars with Matcha

Himbeer-Keks-Riegel mit Matcha

Für 12 Riegel

Keks:

• 100g Hafermehl
• 100g gemahlene Mandeln
• 60g Kokosöl
• 50g Ahornsirup
• Prise Salz
• ½ TL Vanille
• 150g Himbeeren (gefroren)
• 1 EL Chiasamen
• Etwas Wasser
Topping:

• 100g Health Bar Matcha Schokolade (oder weiße Schokolade mit Health Bar Matchapulver)

Mix all ingredients for the cookie base in a blender. Place in the desired shape and bake for about 10 minutes at 170 degrees. In the meantime, let the raspberries cook in a pot with the chia seeds and a little water. Allow the raspberries and the baked base to cool slightly. Then add the raspberry mixture as a second layer on top of the base and let it freeze in the freezer.

Cover the bars with the melted matcha chocolate and return to the freezer to set. Remove from the mold and enjoy!
