Fluffy Matcha Muffins

• 200 g de harina de espelta
• 120 g de azúcar sin salvado (por ejemplo, azúcar de coco o ensayo)
• 1 frecuente El Matchapulver
• 1.5 cucharaditas en polvo de hornear
• ¼ tl de sodio
• ¼ tl sal
• 150 ml de leche vegetal (temperatura ambiente)
• 20 ml de jugo de limón recién presionado
• 50 g de mantequilla vegana
• 30 g de aceite de coco desodorado líquido

• 100 g de chocolate vegano blanco

Preheat the oven to 180 °C convection.

Mix the dry ingredients in a bowl. Heat the butter in a pot until it is liquid and remove from the heat. In a separate bowl, mix the lemon juice, liquid butter, milk, and liquid coconut oil, and add to the dry ingredients. Process well together into a dough.

Fill the batter into a silicone muffin mold.

Bake for 20 minutes. Let cool and then remove from the mold. Melt the chocolate, pour it over the muffins, and top with matcha powder as desired!
