🟢 Matcha coconut layer:

  • 140 g desiccated coconut
  • 15 ml coconut milk (full-fat from a can)
  • 45 g coconut oil (melted)
  • 80 g maple syrup
  • 1 pinch of ground vanilla
  • 2 tsp HEALTHBAR Ceremonial Matcha –to the product

🍓 Strawberry layer:

  • 200 g frozen strawberries
  • 50 ml water
  • 2 tbsp chia seeds

🧑‍🍳 So geht’s – Step by Step

1. Prepare the coconut layer:
Place all ingredients for the coconut matcha layer into a blender and process until a slightly sticky mixture forms.

2. Press into shape:
Line a small baking dish with parchment paper. Press the coconut mixture evenly into the dish and refrigerate for at least 1 hour.

3. Prepare the strawberry layer:
Heat frozen strawberries and water in a saucepan and simmer gently until softened. Then stir in chia seeds and simmer for another 5–10 minutes over low heat until the mixture thickens.

4. Let cool:
Allow the strawberry mixture to cool completely, then spread it evenly over the coconut layer.

5. Cut bars:
After another 20-30 minutes of cooling, cut into about 9 bars – ready to enjoy.

  • It gets even fresher with a splash of lime in the strawberry mixture.
  • For a particularly pretty finish, top with freeze-dried strawberry pieces or matcha chocolate.
  • Ideal for freezing and enjoying in portions – simply let it thaw for 5-10 minutes.

How long do the Bountys last in the fridge?

They'll keep refrigerated for 4–5 days in an airtight container. You can also freeze them—perfect for storing on hot days!

Can I also use fresh strawberries?

Sure! Make sure they're very ripe—then they'll be nice and soft when cooked. You might want to use a little less water than you would with frozen fruit.

Do I really need to refrigerate the coconut layer?

Yes, that's important! Only refrigeration makes the coconut oil solidify again, creating the typical Bounty consistency.

Which mold size is best?

A rectangular pan (approx. 15x20 cm) works well – the larger the pan, the flatter the bars will be.
