These Matcha cinnamon rolls are made from a soft sweet potato dough that becomes wonderfully fluffy thanks to spelt flour, almonds, baking powder and a little bicarbonate of soda. Ingredients for 9-12 rolls, depending on size

For the dough:

  • 180 ml oat milk
  • 250 g sweet potato, diced
  • 2 tbsp deodorised coconut oil
  • 1 tsp apple cider vinegar
  • 3 tbsp maple syrup
  • 300 g spelt flour
  • 100 g ground almonds
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 15 g HEALTHBAR Matcha powder
  • 70 g coconut blossom sugar
  • 2 tsp cinnamon
  • 3–4 tbsp deodorised coconut oil

🧑‍🍳 Here's how – step by step

1. Prepare the sweet potato base
Boil the sweet potato until soft, drain and purée with 1–2 tbsp water. Stir together with oat milk, coconut oil, apple cider vinegar and maple syrup.

2. Mix the dough
Combine spelt flour, almonds, salt, baking powder, bicarbonate of soda and HEALTHBAR Matcha. First fold 300 g of the mixture into the sweet potato mass, then add the remaining flour. Combine briefly and let rest for 30 minutes.

3. Roll out the dough
Preheat the oven to 190 °C top/bottom heat. Roll out the dough on a floured surface into a rectangle, approx. 11 × 15 cm.

4. Filling & shaping
Stir together coconut blossom sugar, cinnamon and coconut oil. Brush the dough with it. Cut lengthways into 3.5–4 cm wide strips, roll up and place in a greased dish.

5. Bake & serve
Bake for 30 minutes until golden brown. Top with melted HEALTHBAR Matcha Chocolate and enjoy warm.

Can I replace the sweet potato?

Yes – pumpkin or Hokkaido squash also work and are similarly mild in flavour.

Can I make the rolls gluten-free?

Yes – best with a gluten-free 1:1 flour blend.

Can I reduce the sugar?

Yes – 50 g coconut blossom sugar in the filling is enough for a milder sweetness.
