Ingredients

For the dough:

  • 30 ml water
  • 3 tbsp unrefined sugar
  • 40 g vegan butter
  • 230 g spelt flour
  • 2 tsp HEALTHBAR Matcha powder
  • 1 pinch of salt
  • 1 pinch of ground vanilla
  • A little coconut oil (neutral) for brushing

🧑‍🍳 Here's how – step by step

1. Preparation
Preheat the oven to 200 °C conventional (top/bottom heat). Line a baking tray with baking paper.

2. Cook & combine the dough
In a small pan, heat the water, sugar and butter until everything has melted. Remove from the heat.

3. Matcha magic
Mix the spelt flour, HEALTHBAR Matcha, salt and vanilla in a bowl. Add the warm liquid and work everything into a smooth, firm dough.

4. Shape the churros
Fill the dough into a piping bag with a star nozzle and pipe about 12 churros directly onto the tray. Brush with a little coconut oil.

5. Bake
Bake for about 10–12 minutes until golden brown.

6. Decorate & serve
Let the churros cool slightly, dust with icing sugar and top with melted Matcha chocolate. Enjoy warm!

💡 Tips & Tricks

  • You can also freeze the churros and briefly reheat them in the oven when needed.
  • For extra crunch: sprinkle with chopped pistachios or toasted sesame.
  • Instead of a piping bag, a freezer bag with a corner snipped off also works (not quite as pretty, but effective!).
Can I deep-fry the churros as well?

Yes – traditionally, churros are deep-fried. This recipe goes for the lighter, baked version. If you want to deep-fry them, use vegetable oil at around 180 °C and fry them until golden brown.

Can I use other flours as well?

You can replace the spelt flour with light wheat flour, for example. For gluten-free versions, we recommend a mix of rice flour and potato starch.

How intense is the matcha flavour?

With 2 tsp of HEALTHBAR Matcha the flavour is pleasantly present – not too bitter, but unmistakably green.

What do I do if I don't have a piping bag?

A freezer bag with a corner snipped off works too. Or you can simply roll the dough into strips by hand.
