For 7-9 cookies

Chia egg:

  • 1 tsp chia seeds
  • 3 tsp hot water

Dough:

  • 60 g vegan butter
  • 45 g unrefined sugar
  • 1 tsp ground vanilla
  • 1/2 tsp bicarbonate of soda
  • 1 level tbsp HEALTHBAR Matcha powder – to the product
  • 2 tsp tapioca flour
  • 35 g ground almonds
  • 75 g spelt flour
  • 1 pinch salt

Toppings:

  • 25 g roasted hazelnuts, chopped
  • 25 g white vegan chocolate, roughly chopped

🧑‍🍳 Here's how – step by step

1. Make the chia egg
Mix the chia seeds with hot water and leave to swell for 5 minutes.

2. Prepare the butter base
Melt the vegan butter in a saucepan, stir in the sugar until it dissolves, remove from the heat and stir in the chia egg and vanilla.

3. Mix the dry ingredients
Mix the flour, almonds, bicarbonate of soda, Matcha, tapioca and salt in a bowl and add to the butter mixture. Work into a smooth dough.

4. Prepare the toppings
Roughly chop the hazelnuts and roast them in a pan without oil. Chop the white chocolate.

5. Shape and bake the cookies
Shape 7–9 cookies, place on a baking tray, top with the white chocolate, press down lightly and bake at 180 °C fan for 10–12 minutes. Leave to cool completely on the tray.

  • For extra chewiness, don't shape the cookies too thin
  • Chilled briefly in the fridge, they become even firmer
  • Grate a little chocolate over them only after baking for a pretty effect
Can I use wheat flour instead of spelt flour?

Yes – both work without any problems.

Arrowroot or cornflour work too.
