1. Soak cashews
Soak the cashews in hot water for at least 30 minutes. Then drain and rinse thoroughly.

2. Mix the sauce
Place cashews in a blender along with oat milk, nutritional yeast, lemon juice, garlic powder, salt, and HEALTHBAR Ceremonial Matcha. Blend until smooth and creamy.

3. Cook pasta
Prepare pasta according to the package instructions. Reserve some of the cooking water when draining—you'll need it for the sauce.

4. Sauté onions and mushrooms
Finely dice the onion and fry it in a little oil until translucent. Slice the mushrooms and fry them until nicely browned.

5. Combine everything
Add the cashew matcha sauce and a little of the pasta water to the pan. Stir well, fold in the pasta, and serve hot.

💡 Tips & Tricks

  • The sauce is also easy to prepare and will keep in the fridge for 2-3 days.
  • Instead of mushrooms, king oyster mushrooms or chanterelles also taste excellent.
  • Garnish with toasted pine nuts or fresh parsley for extra crunch and freshness.
Can you taste the matcha strongly?

No – the HEALTHBAR Matcha adds a subtle, nutty depth to the sauce without being bitter. It pairs perfectly with the cashews and mushrooms.

Which pasta goes best with it?

Fusilli, penne or linguine work great – the main thing is that they absorb the sauce well.

Can I make the sauce in advance?

Sure! It will keep in the refrigerator for about 3 days if stored airtight. Warm it up briefly before serving and dilute with a little oat milk if desired.

Is there an alternative to nutritional yeast?

You can leave it out or replace it with 1 teaspoon of white almond butter or some light miso paste – this also adds a savory touch.

Can I use spinach instead of matcha?

For the color, yes, but the flavor lacks that special touch. Our HEALTHBAR Matcha adds depth and elegance that spinach simply can't.
