Does Matcha Taste Bitter?

Not necessarily. High-quality matcha can taste mild, naturally sweet and creamy. A slight herbal note is part of green tea's character, but with a good matcha it shouldn't be unpleasantly bitter.

Why Does Matcha Sometimes Taste Bitter?

Bitterness can have various causes – such as the quality and harvest of the tea, but also the preparation. Water that's too hot can bring out bitter and harsh notes more strongly. That's why we recommend preparing matcha with water at around 70–80°C.

Perfect Matcha in Three Steps

1. Sift the matcha
Sift 1–2 bamboo scoops (about 2g) of matcha into a bowl.

2. Add water
Pour in about 70 ml of water (70–80°C). Tap water is perfectly fine.

3. Whisk
Whisk with the bamboo whisk for 15–20 seconds in quick W-shaped movements.
