💡 Tips & Tricks

  • The cake tastes even juicier the next day.

  • For more texture: Mix walnuts or raisins into the dough.
  • The frosting can also be served separately as a dip.
Can I make the cake without frosting?

Yes, it also tastes wonderfully juicy on its own. But the matcha frosting brings a special freshness and color into play.

Which apples are best?

Slightly sour varieties such as Boskoop, Elstar or Braeburn are best - they provide balance to the sweetness in the dough.

Can I prepare the frosting?

Absolutely. The matcha frosting will keep for 2-3 days in the fridge - just apply it just before serving.

Can I make the recipe gluten-free?

Yes! Replace the spelled flour with a gluten-free baking mix and, if necessary, add 1 teaspoon of psyllium husk or binding agent.
