For 8-10 muffins

Dry ingredients:

  • 200 g spelt flour
  • 100 g coconut blossom sugar
  • 1 pinch ground vanilla
  • 1.5 tsp baking powder
  • 0.25 tsp bicarbonate of soda
  • 0.25 tsp salt

Liquid ingredients:

  • 100 g vegan butter
  • 175 g plant-based milk
  • 1 splash lemon juice
  • 170 g pitted cherries from a jar

🧑‍🍳 Here's how – step by step

1. Preheat the oven
Preheat the oven to 180 °C fan. Lightly grease the muffin tin or line with cases.

2. Mix the batter
Mix the dry ingredients in a bowl. Gently warm the vegan butter with the milk, add to the flour and mix well with a splash of lemon.

3. Fold in the cherries
Drain the cherries and carefully fold them into the batter without crushing them.

4. Into the oven
Fill the batter into the cases and bake for 25–30 minutes. Then leave to cool completely and remove from the tin.

5. Decorate
Melt the HEALTHBAR Matcha Chocolate in a bain-marie and top the muffins with it. Optionally decorate with an extra cherry.

💡 Tips & Tricks

  • Instead of cherries from a jar, you can also use fresh or frozen ones.
  • For a more intense Matcha flavour: add a little HEALTHBAR Matcha Powder to the batter.
  • The muffins freeze really well & can be topped with fresh chocolate later.

Yes, fresh or frozen cherries work great – pit them well & halve if needed.

Can I make the muffins gluten-free?

It works with a good gluten-free flour blend – look for binding agents like xanthan or flaxseed flour.

Absolutely! They still taste wonderful on the second day – store cool and airtight.
