🧑‍🍳 Here's how – step by step

1. Prepare dough Mix all the ingredients for the dough in a bowl until smooth - the dough should be liquid, but not too thin. If necessary, adjust with a little more milk.

2. Bake the crepes Lightly grease a well-coated pan and heat over medium-low heat. Pour in a small ladle of dough and spread it out evenly and thinly. Bake the crepes until golden on both sides. After baking, stack them on a plate and cover with a cloth to keep them warm and soft.

3. Toss in cinnamon-sugar Now turn the warm crepes directly in the cinnamon-sugar mixture or sprinkle with it - this way the mixture sticks particularly well. Then roll it up loosely or roll it up like cinnamon rolls.

4. Serve Enjoy fresh from the pan - optionally top with vegan yoghurt cream, apple pieces or a dash of maple syrup.

💡 Tips & Tricks

  • For fluffier crepes: stir in 1-2 tablespoons of sparkling water.
  • Also perfect as a dessert with vanilla ice cream or apple compote.
  • The crepes can also be enjoyed cold - e.g. B. as a meal prep snack.
  • For extra sweetness: use a mixture of matcha sugar and cinnamon.
Can I also prepare the crepes gluten-free?

Yes! Replace spelled flour with a gluten-free flour mixture (e.g. rice flour-based) and add a little more liquid if the dough is too thick.

Which Matcha is best?

for the best taste and color we recommend ours HEALTHBAR Ceremonial Matcha – it is finely ground, not bitter and perfect for sweet recipes.

Why should I keep the crepes warm?

So that they remain soft and elastic - this way the cinnamon-sugar sticks optimally and the crepes are easier to roll.

What goes particularly well as a topping?

A vegan yogurt cream with vanilla, caramelized apple pieces or some HEALTHBAR matcha chocolate go perfectly with it.
