✨ Ingredients for 7–9 cookies

Chia egg:

  • 1 tsp chia seeds
  • 3 tsp hot water

Dough:

  • 60g vegan butter
  • 45g unrefined sugar
  • 1 tsp ground vanilla
  • 1/2 tsp baking soda
  • 1 level tablespoon of HEALTHBAR matcha powder – to the product
  • 2 tsp tapioca flour
  • 35 g ground almonds
  • 75 g spelled flour
  • 1 pinch of salt

Toppings:

  • 25 g roasted hazelnuts chopped
  • 25 g white vegan chocolate, roughly chopped

🧑‍🍳 Here's how – step by step

1. Make chia egg Mix chia seeds with hot water and let them soak for 5 minutes.

2. Mix the butter base Melt vegan butter in a saucepan, stir in sugar until it dissolves, remove from heat and stir in chia egg and vanilla.

3. Mix dry ingredients Mix the flour, almonds, baking soda, matcha, tapioca and salt in a bowl and add to the butter mixture. Process into a smooth dough.

4. Prepare toppings Roughly chop the hazelnuts and roast them in a pan without oil. Chop white chocolate.

5. Shape and bake cookies Place 7-9 cookies on a baking tray, top with the white chocolate, press lightly and bake at 180 °C for 10-12 minutes. Allow to cool completely on the tray.
