Ingredients for 3 servings

For the batter:

  • 180 ml plant-based milk (e.g. oat or almond)
  • 1 tsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp neutral oil (e.g. rapeseed oil)
  • 120 g flour (spelt or wheat)
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1–1½ tsp HEALTHBAR Ceremonial Matcha – to the product

For frying:

  • a little coconut oil (neutral)

To serve:

  • Maple syrup, fresh berries, banana, coconut yoghurt, etc.

🧑‍🍳 Here's how – step by step

1. Prepare the buttermilk substitute
Put the plant-based milk and apple cider vinegar in a bowl and leave to stand for 3 minutes.

2. Combine the wet ingredients
Add the maple syrup, vanilla and oil to the milk and stir well.

3. Mix the dry ingredients
Combine the flour, matcha, baking powder and salt in a separate bowl.

4. Make the batter
Add the dry ingredients to the wet ones and whisk to a smooth batter.

5. Fry
Grease a large pan with a little coconut oil. Over medium heat, pour a little batter into the pan in a circular shape at a time. Cook for about 1 minute per side. Repeat until all the batter is used up.

6. Serve
Stack the pancakes and top with maple syrup, fruit or nut butter as you like.

  • For extra fluff: leave to rest for 5 minutes before frying
  • Sift the matcha beforehand for an even colour

  • Pancakes freeze really well & can be toasted
Can I make the recipe gluten-free too?

Yes! Replace the flour with a gluten-free flour blend containing a binding agent. Make sure the batter doesn't get too dry – add a little more plant-based drink if needed.

Can you taste the matcha strongly?

The flavour is pleasantly mild – our Ceremonial Matcha gives a fine, slightly nutty note. If you like it stronger, you can increase the amount slightly.

Can I prepare the batter ahead?

It's best to prepare them fresh so the pancakes stay fluffy. However, the batter can rest covered in the fridge for 1–2 hours – stir again before frying if needed.

What makes a good topping for matcha pancakes?

Fresh berries, banana, maple syrup or a dollop of plant-based yoghurt are perfect companions. A drizzle of Matcha Chocolate tastes wonderful with them too.

Can I just stir in the matcha or should I dissolve it first?

We recommend adding the powder directly to the flour and mixing well, or sifting it beforehand. That way no lumps form and the colour stays even.
