Our Strawberry Matcha Bountys are the perfect no-bake treat: a fruity strawberry layer, a creamy coconut matcha center – served chilled and super quick to make. Soft on the outside, chewy on the inside – a vegan bar to fall in love with!

These Strawberry Matcha Bounties are the perfect make-ahead summer dessert. The base is made from grated coconut, coconut milk and our mildly aromatic HEALTHBAR Ceremonial Matcha Forms a delicately melting, green layer. On top there is a fruity-sweet strawberry chia jam that gives the whole thing a fresh twist.

✨ Ingredients for approximately 9 pieces

🟢 Matcha coconut layer:

  • 140 g desiccated coconut
  • 15 ml coconut milk (full fat from a can)
  • 45 g coconut oil (melted)
  • 80 g maple syrup
  • 1 pinch of ground vanilla
  • 2 tsp HEALTHBAR Ceremonial Matcha – to the product

🍓 Strawberry layer:

  • 200 g frozen strawberries
  • 50ml water
  • 2 tbsp chia seeds

🧑‍🍳 Here's how – step by step

1. Prepare coconut layer: Put all the ingredients for the coconut-matcha layer in a blender and process into a slightly sticky mass.

2. Press into shape: Line a small mold with baking paper. Press the coconut mixture in evenly and place in the refrigerator for at least 1 hour.

3. Prepare strawberry layer: Heat the frozen strawberries with water in a pot and simmer gently until they are soft. Then stir in chia seeds and simmer over low heat for another 5-10 minutes until the mixture thickens.

4. Allow to cool: Allow the strawberry mixture to cool completely, then spread it evenly over the coconut layer.

5. Cut bars: After a further cooling time of 20-30 minutes, cut into approx. 9 bars - ready to enjoy.

💡 Tips & Tricks

  • It gets even fresher with a splash of lime in the strawberry mixture.
  • For a particularly pretty finish: top with freeze-dried strawberry pieces or matcha chocolate.
  • Ideal for freezing and enjoying in portions - simply let it thaw for 5-10 minutes.

How long do the bounties last in the fridge?

They will keep refrigerated in an airtight box for 4-5 days. You can also freeze them - ideal for stocking up on hot days!

Can I also use fresh strawberries?

Clear! Make sure they are very ripe - then they will be nice and soft when cooked. If necessary, use a little less water than with frozen fruits.

Do I really need to refrigerate the coconut layer?

Yes, that is important! Only when cooled does the coconut oil solidify again and ensure the typical Bounty consistency.

Does your matcha chocolate also fit here?
