Matcha cinnamon snacks

Matcha Zimtschnecken

Ingredients for 9-12 rolls, depending on size

• 180 ml oat milk
• 250 g peeled and diced sweet potato
• 2 tbsp deodorized coconut oil
• 1 tsp apple cider vinegar
• 3 tbsp maple syrup
• 300 g spelt flour
• 100 g ground almonds
• ½ tsp salt
• 2 tsp baking powder
• ¼ tsp baking soda
• 15 g matcha powder
• 70 g coconut blossom sugar
• 2 tsp cinnamon
• 3-4 tbsp deodorized coconut oil
Topping

• 1 bar Health Bar Matcha chocolate

preparation

Dice the sweet potatoes and cook in water softly. Then drain and stomp smooth with 1-2 tablespoons of water. Small the puree with the oat milk, the coconut oil, the apple cider vinegar and the maple syrup in a bowl.

In another bowl, the flour, the almonds, the salt, the baking powder, cover soda, mix Matcha. Add the flour to the liquid mass and fold in the flour and fold in. Now add the remaining flour, mix together. Do not mix too long, otherwise the dough will be a little too moist because of the sweet potato.

Leave covered for 30 minutes. Then preheat the oven at 190 degrees upper and bottom heat.

Roll out the dough on a well -floured area into a rectangle (approx. 11x15cm) and dust with a little flour.

Mix the coconut blossom sugar with the cinnamon and coconut oil in a bowl. A smooth paste is to be created. Brush the dough evenly.

Then pick up a pizza scooter or a knife and cut approx. 3.5-4 cm wide dough strips lengthways (see picture). Now tighten the dough lengthways and place in a greased baking pan (can also be a quiche shape). Press the individual cinnamon snail a little and place the next one right next to it. Roll up the strips until all snails are distributed in the mold.

Now bake in the oven for 30 minutes and serve warm.
