✨ Ingredients for approximately 4 large cookies

🍪 Cookie dough:

  • 140 g spelled flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • ½ tsp ground vanilla
  • 6 g HEALTHBAR matcha powder – to the product
  • 100 g raw cane sugar
  • 85 g liquid vegan butter
  • 2 tbsp apple pulp

  • 1 apple
  • 1 tbsp apple pulp
  • 1 heaped teaspoon of starch
  • Some vanilla

🧑‍🍳 Here's how – step by step

1. Preheat oven: On 170 °C top/bottom heat Set.

2. Prepare dough: Mix dry ingredients (flour, baking powder, baking soda, salt, vanilla, matcha) in a bowl. In a second bowl, stir together the butter, sugar and apple puree. Combine both mixtures and work into a uniform dough.

3. Form cookies & bake (part 1): Form the dough into 4-5 balls, place them on a baking tray lined with baking paper (leave plenty of space between them) and bake for 12 minutes.

4. Prepare apple filling: Dice the apple into small pieces and simmer gently in a pot with a little water, apple pulp and vanilla. Mix the starch with a little water until smooth, fold in and bring to the boil briefly until it thickens.

5. Fill & continue baking: Place 1 teaspoon of apple mixture in the middle of each cookie and again 2-3 minutes Put in the oven.

6. Cool & top: Allow cookies to cool completely. Optionally with Matcha chocolate Decorate: To do this, melt dark chocolate, mix with a pinch of matcha and drizzle over the cookies.
