Ingredients

  • 100 g frozen raspberries
  • 100 g desiccated coconut
  • 2–3 tbsp maple syrup (optional)
  • 100 g HEALTHBAR Matcha Chocolate – to the product

🧑‍🍳 Here's how – step by step

1. Blend the base
Blend the frozen raspberries with the desiccated coconut in a high-performance blender or food processor into a mouldable mixture. If you like it sweeter, add maple syrup.

2. Shape the balls
Quickly (!) shape about 10 equal-sized balls while the mixture is still cold. Place on baking paper.

3. Freeze
Freeze the balls for at least 1 hour so they firm up.

4. Melt the chocolate
Carefully melt the HEALTHBAR Matcha Chocolate in a bain-marie.

5. Coat
Dip the frozen balls one by one into the Matcha chocolate or coat them using a spoon. Place back on the baking paper.

6. Chill & enjoy
Freeze again until the chocolate is completely set. Serve chilled.

💡 Tips & Tricks

  • For crunch: sprinkle chopped pistachios or coconut chips over the chocolate before it sets
  • For sweetness: you can also use date paste or agave instead of maple syrup
  • You can also roll the balls in dark plain chocolate and dust with Matcha powder
Can I use fresh raspberries instead of frozen?

Frozen raspberries give better binding when shaping. With fresh fruit the mixture often gets too soft – if in doubt, add more desiccated coconut.

Does the Matcha chocolate get too soft when coating?

No – after briefly setting in the freezer it becomes pleasantly crisp. It's best to chill them again right after coating.

How long do the balls keep?

Wrapped airtight in the freezer, they keep for about 2 weeks. Straight from the freezer they're like little ice pralines.

Which Matcha chocolate do you use?

Our own: the HEALTHBAR Organic Matcha Chocolate Plain – vegan, melt-in-the-mouth and refined with the finest Ceremonial Matcha.

Can I prepare the mixture and coat it later?

Yes – pre-freeze the shaped balls and coat them with the melted chocolate shortly before serving.
