Ingredients for a cake pan

  • 250 g spelt flour or gluten-free flour
  • 60 g ground almonds
  • 1 heaped tsp baking powder
  • 120 g unrefined sugar
  • 1 tsp ground vanilla
  • 30 g maple syrup
  • 200 ml oat milk
  • 1 tsp apple cider vinegar
  • 100 g melted vegan butter
  • 2 tsp HEALTHBAR Ceremonial Matcha – to the product

🧑‍🍳 Here's how – step by step

1. Prepare the batter base
Preheat the oven to 180 °C top and bottom heat and grease a bundt tin. Combine all the dry ingredients in a bowl. Stir the oat milk with the apple cider vinegar, let it stand briefly, then stir in the maple syrup and melted vegan butter. Add the liquid to the dry ingredients and stir into a smooth batter.

2. Divide the batter
Pour half of the base batter into the prepared tin.

3. Make the Matcha batter
Mix the remaining batter with HEALTHBAR Ceremonial Matcha until an even green colour forms.

4. Marble
Pour the Matcha batter into the tin and, using a fork, swirl through both batters in a spiral to create the marble pattern.

5. Bake & optionally top
Bake for approx. 40 minutes, then let cool completely and only then turn out of the tin. Optionally top with melted HEALTHBAR Matcha Chocolate and chopped hazelnuts.

  • Be sure to let the cake cool completely so it doesn't break when turning out
  • For a nuttier note, add a little almond butter to the batter
  • Leftovers keep for up to 4 days when stored airtight – they taste even better the next day
