For the dough:

  • 180 ml plant-based milk (e.g. oat or almond)
  • 1 tsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp neutral oil (e.g. rapeseed oil)
  • 120 g flour (spelled or wheat)
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1–1½ tsp HEALTHBAR Ceremonial Matcha – to the product

For baking:

  • some coconut oil (neutral)

To serve:

  • Maple syrup, fresh berries, banana, coconut yogurt, etc.

🧑‍🍳 Here's how – step by step

1. Prepare buttermilk substitute Put plant-based milk with apple cider vinegar in a bowl and let stand for 3 minutes.

2. Mix liquid ingredients Add maple syrup, vanilla and oil to the milk and mix well.

3. Mix dry ingredients Mix flour, matcha, baking powder and salt in a separate bowl.

4. Stir the dough Add the dry ingredients to the liquid ones and mix with a whisk to form a smooth dough.

5. Bake out Grease a large pan with some coconut oil. Pour a little dough into the pan in a circle over medium heat. Cook about 1 minute per side. Repeat the process until the dough is used up.
