✨ Ingredients for approximately 10 bars

Cookie base:

  • 100g oat flour
  • 100 g ground almonds
  • 60 g coconut oil (melted)
  • 50 g maple syrup
  • ½ tsp vanilla extract
  • 1 pinch of salt

Raspberry layer:

  • 150 g frozen raspberries
  • 1 tbsp chia seeds
  • 1-2 tbsp water

Topping:

🧑‍🍳 Here's how – step by step

1. Preheat oven Preheat to 170°C fan oven. Line a rectangular shape with baking paper.

2. Prepare the dough for the base Mix all the ingredients for the cookie base in a mixer or bowl until you have a malleable mass. Pour into the tin, press flat and bake for about 10 minutes. Then let it cool down.

3. Cook raspberry layer Lightly boil frozen raspberries with chia seeds and a little water in a pot. Let the mixture cool until it thickens slightly.

4. Layers & freeze Pour the raspberry mixture evenly onto the baked base and place the mold in the freezer for about 1 hour.

5. Melt the matcha chocolate The HEALTHBAR Matcha chocolate Melt carefully in a water bath.

6. Topping & Finalization Cover the bars with the melted chocolate and refrigerate until solid. Cut into bars and enjoy!

💡 Tips & Tricks

  • If you like it sweeter, add a little more maple syrup to the raspberry layer.
  • Instead of almonds, you can also use ground cashews or walnuts.
  • You can also top the bars with freeze-dried raspberries or toasted sesame seeds.
Can I use fresh raspberries instead of frozen?

Yes, that works - but frozen raspberries provide more binding and often have a more intense taste.

How long do the bars last?

They will keep in an airtight container in the freezer for about 2 weeks. Allow to thaw for 5-10 minutes before enjoying.

Can I also combine regular white chocolate with matcha?

Absolutely! Simply melt vegan white chocolate and add 1 tsp Ceremonial Matcha Stir in – tastes intense and looks beautifully green.

Are the bars gluten free?

If you use certified gluten-free oat flour – yes! Pay attention to the corresponding label.
