For 12 bars

Biscuit base:

  • 100 g oat flour
  • 100 g ground almonds
  • 60 g coconut oil (melted)
  • 50 g maple syrup
  • ½ tsp vanilla extract
  • 1 pinch salt

Raspberry layer:

  • 150 g frozen raspberries
  • 1 tbsp chia seeds
  • 1–2 tbsp water

🧑‍🍳 Here's how – step by step

1. Preheat the oven
Preheat to 170 °C fan. Line a rectangular tin with baking paper.


2. Prepare the dough for the base
Combine all the biscuit base ingredients well in a blender or bowl until a mouldable mass forms. Place into the tin, press flat and bake for approx. 10 minutes. Then leave to cool.


3. Cook the raspberry layer
Gently reduce the frozen raspberries with chia seeds and a little water in a pan. Leave the mixture to cool until it thickens slightly.


4. Layer & freeze
Spread the raspberry mixture evenly over the baked base and place the tin in the freezer for approx. 1 hour.


5. Melt the Matcha chocolate
Gently melt the HEALTHBAR Matcha Chocolate in a bain-marie.


6. Topping & finishing
Cover the bars with the melted chocolate and chill again until everything is set. Cut into bars and enjoy!

💡 Tips & Tricks

  • If you like it sweeter, add a little more maple syrup to the raspberry layer.
  • Instead of almonds you can also use ground cashews or walnuts.
  • You can also top the bars with freeze-dried raspberries or toasted sesame.
Can I use fresh raspberries instead of frozen?

Yes, that works – but frozen raspberries provide more binding and are often more intense in flavour.

How long do the bars keep?

Stored airtight in the freezer they keep for approx. 2 weeks. Let them thaw for 5–10 min before enjoying.

Can I also combine ordinary white chocolate with Matcha?

Absolutely! Just melt vegan white chocolate and stir in 1 tsp Ceremonial Matcha – it tastes intense and looks beautifully green.

Are the bars gluten-free?

If you use certified gluten-free oat flour – yes! Look out for the relevant label.
