💡 Tips & Tricks

  • The sauce is also easy to prepare and lasts 2-3 days in the fridge.
  • Instead of mushrooms, king oyster mushrooms or chanterelles also taste great.
  • Garnish with toasted pine nuts or fresh parsley for extra crunch and freshness.
Can you taste the matcha strongly?

No – that one HEALTHBAR Matcha gives the sauce a fine, nutty depth without being bitter. It harmonizes perfectly with cashews and mushrooms.

Which pasta goes best with it?

Fusilli, penne or linguine work great – the main thing is that they absorb the sauce well.

Can I make the sauce in advance?

Clear! It will keep in an airtight container in the refrigerator for about 3 days. Before serving, warm it up briefly and add a little oat milk if necessary.

Is there an alternative to nutritional yeast?

You can leave it out or replace it with 1 teaspoon of white almond butter or some light miso paste - this also adds a savory touch.

Can I use spinach instead of matcha?

For the color, yes, but the special note is missing in terms of taste. Our HEALTHBAR Matcha Brings depth and elegance that spinach does not offer.
