✨ Ingredients for a small baking sheet (approx. 12 pieces)

For the pumpkin pie:

  • 200g spelled or wheat flour (light)
  • 1 tsp baking soda
  • 1 pinch of salt
  • 250g pumpkin puree
  • 1 tsp vanilla
  • ½ tsp cinnamon or pumpkin pie spice
  • 50g oat drink
  • 1-2 teaspoons lemon or orange juice
  • 60g cashew butter
  • 130g coconut blossom or raw cane sugar

For the cashew matcha frosting:

  • 100g cashew butter
  • ½ tsp vanilla extract
  • 1 pinch of salt
  • 30g plant drink
  • 50g maple syrup
  • a splash of lemon or orange juice (optional)
  • 40g melted coconut oil
  • 2-3 tsp HEALTHBAR Matcha

For the granola topping:

  • 25g oat flakes
  • 25g nuts or seeds of your choice
  • 1 pinch of salt
  • 1 pinch of cinnamon or pumpkin spice
  • approx. 15g maple syrup

🧑‍🍳 Here's how – step by step

1. Prepare pumpkin dough Preheat oven to 190°C top/bottom heat. Mix dry ingredients (flour, baking soda, salt, spice) in a bowl. In a second bowl, mix pumpkin puree, cashew butter, sugar, plant drink, citrus juice and vanilla. Then carefully mix everything into a dough using a spatula or spoon - only stir as much as necessary.

2. Baking Spread the dough onto a tray lined with baking paper. Bake for 25-30 minutes - don't forget to test the chopsticks. Then let it cool completely.

3. Mix the frosting While the cake is baking, melt the coconut oil. Put the cashew butter, vanilla, maple syrup, plant drink, salt and citrus juice in a bowl and beat with a mixer until creamy. Then stir in the liquid coconut oil. Chill the cream for at least 1.5-2 hours.

💡 Tips & Tricks

  • Pumpkin puree from Hokkaido, homemade or canned, both work.
  • The frosting can also be prepared the day before - important: beat well after cooling!
  • Instead of a tray, you can also use muffins or a small springform pan (adjust the baking time if necessary).
Can I use other nut butter than cashew?

Cashew butter has a neutral taste and is particularly creamy - almonds or macadamia also work, but could have a more dominant taste.
