  • 30g green curry paste
  • 200 ml coconut milk (9% fat)
  • 250ml vegetable broth
  • 2 tbsp lime juice
  • 1 tsp No Fish sauce (or soy sauce)
  • 2 tsp HEALTHBAR Matcha
  • 250g tofu
  • 250g mushrooms
  • 350g sugar snap peas
  • 300g pak choy
  • 1 tbsp coconut oil
  • 20g fresh coriander
  • 1 organic lime

Optional tofu marinade:

  • 1 tbsp peanut butter
  • 3 tbsp tamari sauce
  • 3 tbsp sesame oil
  • 2 tbsp maple syrup
  • 1 clove of garlic
  • 2 tbsp water

🧑‍🍳 Here's how – step by step

1. Prepare curry sauce Fry the curry paste in a saucepan over medium heat for 2-3 minutes. Add coconut milk and vegetable broth and bring to the boil. Season with lime juice and No Fish sauce, HEALTHBAR Matcha Stir in and set aside.

2. Prepare tofu Cut tofu into cubes. Optionally marinate with the marinade (mix all ingredients) for 15 minutes. Then fry in coconut oil until golden brown.

3. Fry vegetables Cut the mushrooms, prepare the snow peas and pak choy. Add to the tofu and sauté for another 5 minutes.

4. Unite everything Pour the prepared curry sauce over the vegetable-tofu mixture and bring to the boil briefly.
