✨ Ingredients for 9–12 snails

For the dough:

  • 180 ml oat milk
  • 250 g diced sweet potato
  • 2 tbsp deodorized coconut oil
  • 1 tsp apple cider vinegar
  • 3 tbsp maple syrup
  • 300 g spelled flour
  • 100 g ground almonds
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 15g HEALTHBAR Matcha powder
  • 70 g coconut blossom sugar
  • 2 tsp cinnamon
  • 3-4 tbsp deodorized coconut oil

🧑‍🍳 Here's how – step by step

1. Prepare sweet potato base Boil the sweet potato until soft, drain and puree with 1-2 tablespoons of water. Mix apple cider vinegar and maple syrup with oat milk, coconut oil.

2. Mix the dough Spelled flour almonds salt baking powder baking soda and HEALTHBAR Matcha Mix. First fold 300 g of the mixture into the sweet potato mixture then add the remaining flour. Mix briefly and let rest for 30 minutes.

3. Roll out the dough Preheat the oven to 190 °C top and bottom heat. Roll out the dough on a floured surface into a rectangle approx. 11 × 15 cm.

4. Filling & Molds Mix coconut blossom sugar, cinnamon and coconut oil. Spread dough with it. Cut strips 3.5-4 cm wide lengthwise, roll up and place in a greased tin.
