Ingredients

  • 250 g vegan white chocolate or matcha chocolate – to the matcha chocolate
  • 2 tsp HEALTHBAR Ceremonial Matcha – to the Matcha (if you use white chocolate)
  • 40 g puffed rice (e.g. puffed brown rice, unsweetened)

🧑‍🍳 Here's how – step by step

1. Melt the chocolate
Gently melt the chocolate over a bain-marie. If you're using white chocolate: stir in the matcha powder until everything is well combined.

2. Mix in the puffed rice
Put about 200 g of the melted chocolate in a bowl and combine with the puffed rice.

3. Shape it
Spread the mixture evenly into a brownie tin lined with baking paper.

4. Topping & chill
Spread the remaining chocolate on top as a topping and smooth it out. Leave to set in the fridge (at least 1 hour).

5. Cut & snack
Cut into squares and enjoy!

💡 Tips & Tricks

  • Instead of white chocolate, you can also use our matcha chocolate directly
  • Optional: sprinkle a little sea salt on the topping for a crunchy kick
  • Ideal as a gift or a snack on the go
  • Keeps for about 1 week stored airtight in the fridge
Can I use puffs other than rice?

Yes! You can also use puffed quinoa, amaranth or millet – the important thing is that they're unsweetened and crunchy.

Which chocolate works best?

White vegan chocolate works great – especially in combination with our Ceremonial Matcha. Alternatively: use our Matcha chocolate directly.

How long do the Nippons keep?

Stored airtight in the fridge they stay fresh for about 7–10 days – but honestly: they're usually gone sooner!

Can you taste the matcha strongly?

No – the flavour is fine and harmonious. The matcha rounds off the sweetness and gives a slightly bitter, balanced aroma.

Can I freeze the Nippons too?

Yes, that works – ideally in a box with baking paper in between. That way you always have a stash ready!
